Recipe: Cashew Crusted Key Lime Pie
Crust:
2 cups chopped cashews 1 cup graham cracker crumbs ½ cup sugar ¾ cup melted butter
Mix all ingredients together and line in a greased 9-inch pie pan. Par-bake crust in a 350-degree oven until golden brown.
Filling:
3 cups sweetened condensed milk 9 egg yolks 1 ½ cups Key Lime juice
In mixing bowl, combine sweetened condensed milk and egg yolks until smooth. Add Key Lime juice slowly. Pour into parbaked crust and bake in a 300-degree oven for 20 minutes or until center is set.
Topping:
2 cups heavy cream
Zest of one orange
2 oz. sugar
Whip all ingredients together and spread over cooled pie. Allow to set for at least 30-minutes

This is the Island’s Signature Cocktail. It was created and named long ago by one of the Island’s first bartenders. The name was a random thought as he was describing the effect of the drink – your body turns to a “gumby” state and you simply want to “slumber” in a hammock all afternoon. Ingredients: Mix and serve chilled. Garnish with fresh coconut. |
