Cashew Crusted Key Lime Pie and Gumby Slumber Cocktail
Cashew Crusted Key Lime Pie
- 2 cups chopped cashews
- 1 cup graham cracker crumbs
- ½ cup sugar
- ¾ cup melted butter
Mix all ingredients together and line in a greased 9-inch pie pan. Par-bake crust in a 350 degree oven until golden brown.
- 3 cups sweetened condensed milk
- 9 egg yolks
- 1 ½ cups Key Lime juice
In mixing bowl, combine sweetened condensed milk and egg yolks until smooth. Add Key Lime juice slowly. Pour into par-baked crust and bake in a 300 degree oven for 20 minutes or until center is set.
- 2 cups heavy cream
- Zest of one orange
- 2 oz sugar
Whip all ingredients together and spread over cooled pie. Allow to set for at least 30 minutes.
Gumby Slumber Cocktail
This is the Island’s Signature Cocktail. It was created and named long ago by one of the Island’s first bartenders. The name was a random thought as he was describing the effect of the drink – your body turns to a “gumby” state and you simply want to “slumber” in a hammock all afternoon.
- 1 part pineapple juice
- 1 part cranberry juice
- 1 part orange juice
- 1 part Captain Morgan Spiced Rum
- 1 part Parrot Bay Rum
Mix and serve chilled. Garnish with fresh coconut.
