Chef Brendan Mica

Chef Brendan Mica was born and raised in Los Angeles, California, but now resides in the beautiful Florida Keys with his young family. Brendan’s appointment as Executive Chef at Little Palm Island is the result of traveling the world to further his craft.

Most recently, Brendan was the Executive Chef at Santuari in Los Angeles. Prior to Santuari, he was honored to be the Chef de Cuisine at the Standard Hotel in Manhattan, New York. Before joining the Standard, Brendan was part of an exciting re-branding and re-opening project for Asia de Cuba restaurants in New York, London and Abu Dhabi.

While his prestigious new role at Little Palm Island is very consuming, Brendan is careful to balance family time and pursue his outside interests such as carpentry, gardening, pottery, and of course, fishing!

Chef Brendan’s cuisine since arriving at Little Palm Island has been praised by our guests, and lauded by prestigious food writers. Brendan is passionate that his food should create, enhance and define our memories, and Little Palm Island Dining Room is the perfect place to do just that.
